Question: How can fermentation be made more accessible and enjoyable in everyday households?

Date: 2018

Project: HBKsaar
Fermentation transforms a simple food into something special and valuable. Beyond enhancing its nutritional value, the process primarily develops complex flavors. The taste changes, intensifies, and the food matures—much like how a good wine evolves from simple grapes through the influence of microorganisms and the aging process into a special drink. In the same way, simple vegetables become unique and flavorful through fermentation.

This was the inspiration behind creating a set of three different-sized fermentation pots, perfect for any household and suited for various dish sizes. The smallest pot is ideal for making seasoning pastes that add a special touch to cooked dishes. The medium size is perfect for crunchy vegetable sides, while the largest is great for making kimchi or sauerkraut. All of the pots are intentionally smaller than standard fermentation pots, making them perfect for experimenting without the fear of producing too much. To store them, I simply nest the pots inside one another, saving space and keeping them neatly tucked away.
